Would this be your best shielded option for using inside an amp chassis? (input jack to V1a grid for example)

Shielded wire isn't normally used inside amplifiers, unless there is a layout/design issue to work around. I suppose this could be used for that reason if desired, but it seems oddly large for that purpose at nearly 1/4" diameter. Twisted pair wiring is much more common inside amp chassis.
