Can these be used instead of standard right angle jacks between instrument and amp?

Sure, if you have cable small enough, but you generally don't want really small cable for that purpose. It might be better to go with SP600-sized plugs. Whatever you go with, refer to the sizing compatibility in the description to be sure it will fit the cable you plan on using.
