Those are generally all decisions up to the builder's preferences. If you do an internet search for "best glue for celluloid guitar binding", you'll see many suggestions and recommendations from luthiers and techs around the world. Much of it is based on individual preferences for that particular person's workflow. There isn't really a "perfect" way. All of the different options have certain advantages and disadvantages. As for the groove size, again, that's generally up to the builder's preferences. As long as it is just slightly smaller than the size of the binding, it will work. You then scrape/shape the binding down to match the guitar's body.
