Any reason these should not be used for bias adjustment for a pair of EL34s?

In most cases, 1/4W rating is plenty for bias in guitar tube amps. But, it might depend on the specific circuit. Or, if there are issues in the circuit causing too much voltage or current to go to the pot, that would also burn it out. It would be something a qualified tech would need to investigate.
