You wouldn't normally use this type of switch, but it can certainly be done. Here's a quick drawing I made up for you:
How would you wire this for north coil/series/south coil on a humbucker? Switchcraft Slide Switch On-Off-On - Black
Trying to figure out how to wire a Seymour Duncan humbucker as follows:
Position 1= north coil
Position 2 = both coils in series
Position 3 = south coil
Position 1= north coil
Position 2 = both coils in series
Position 3 = south coil
